Peri Peri Crocodile Skewers September 16, 2021

We’ve given this popular Zimbabwe dish a bit of a twist.
Try our Tsowa Safari Island Peri Peri Crocodile Skewers with a Coriander & Peanut Pesto

INGREDIENTS – CROCODILE SKEWERS

500g crocodile meat
3 tablespoons olive oil
1 tablespoon lemon juice
½ a teaspoon crushed birds eye chilli
salt & pepper
1 clove of crushed garlic

  • Cube the crocodile meat into 1.5cm pieces
  • Whisk the marinade ingredients together and mix with the crocodile
  • Marinate in the fridge for 2 to 3 hours 
  • Once marinated skewer the cubes of crocodile

INGREDIENTS – CORIANDER & PEANUT PESTO

50g Coriander – washed and dried
½ clove garlic
¼ cup olive oil
2 tablespoons grated parmesan
2 tablespoons toasted peanuts 
2 inches of salt

  • Blend the above pesto ingredients together
  • Once blended, add the lemon juice and stir 

To cook the crocodile – heat a cast iron grill pan until smoking hot, grill the skewers for just over a minute on all 4 sides until lightly golden brown, serve with a light salad and the coriander and peanut pesto for dipping
